Banana Chocolate Oatmeal Muffins

Need a quick breakfast? These Banana Chocolate Oatmeal Muffins are a great, fast breakfast that are packed with energy and can provide a little bit of sweetness for those craving some chocolate.


When baking them, I was a little worried about the coconut oil that is in them. It made the batter appear runny and I thought they would have a hard time setting up in the oven. But when they came out and finally cooled, you couldn't even taste the coconut oil. The muffins are moist, but they had no problem baking.


You can bake them in a standard muffin tin, if you'd like, but I only had a mini muffin tin on hand. Instead of the recommended 30 minute bake time, I put them in for 15 minutes and it seemed to be plenty of time.



  • 1 cup bananas, mashed
  • 2 eggs
  • 1/4 cup honey
  • 3 cups rolled oats
  • 1 tsp baking soda
  • 1 cup milk
  • 2 tbsp light brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 2 tsp vanilla extract
  • 1/4 c coconut oil
  1. Preheat over to 350 degrees
  2. Combine oats, sugar, cinnamon, salt & baking soda
  3. In medium bowl, combine eggs, honey, mashed bananas, vanilla, milk & coconut oil
  4. Add wet ingredients into the dry ingredients & stir
  5. Add chocolate chips & stir
  6. Scoop batter evenly into lightly greased muffin tin
  7. Bake for 30 minutes (for mini muffins, bake 10-15 minutes)
  8. Allow to cool for 10 minutes
